Low Carb Poundcake Recipe With Lemon and Blueberries

I personally love baking with blueberries! I pick lots of them in the summer and then stock my freezer with them.

When I do have a big batch, I always make blueberry syrup to use on pancakes, waffles, or mix into plain yogurt. But I wanted to try something new.

While looking for a recipe, I stumbled upon a few lemon blueberry pound cake recipes. That gave me the idea to use an old pound cake recipe I use for strawberry shortcake and adapt it to use blueberries!

Ingredients Needed For Low-Carb Pound Cake

All of the exact ingredient amounts are in the printable recipe card at the bottom of this post. First, I'm going to share some information about what I used to make this gluten-free pound cake.

Butter

The first thing you'll need is 2 sticks of butter. Let it sit at room temperature and soften so it's easier to cream. You'll mix it together with cream cheese and low-carb sugar substitute.

Eggs

This cake takes 10 eggs, so make sure you have enough!

Flavoring

To flavor it, I used both lemon extract and vanilla extract.

Flour

For the flour, I used a combination of almond and coconut flour. I think this makes the cake firm and not too dry at the same time.

Blueberries

I also used 2 cups of frozen blueberries, but you can use fresh ones too.

Glaze

For the glaze, I combined Swerve confectioner's powdered sweetener with lemon juice. The result is really tasty!

Please note:Check out the recipe card at the bottom for a full list of ingredients used to make this low carb recipe.

Quick Tips:

  • Let the cake cool before you add the glaze. This is really important if you want the glaze to be thicker on the cake.
  • Make sure you grease the tube or bundt pan really well. I used a silicone bundt pan and didn't have to grease it much.

How To Make Lemon Blueberry Pound Cake

This is the perfect recipe to make when you need to use up some frozen blueberries. This recipe tastes perfect with fresh blueberries that you pick in the summer or even frozen ones.

This is a very simple recipe. All the instructions are in the printable recipe card at the bottom of this post.

Make A Creamy Base

First, cream together the butter, cream cheese, and sweetener. Then, add all the eggs and extracts. Set that aside.

Combine Dry Ingredients

In another bowl, combine the almond flour, coconut flour, and baking powder.

Mix Everything Together

Slowly add this flour mixture to the egg mixture. When this is well-combined, set it aside.

Mix In The Blueberries

Coat the blueberries in coconut flour. Then, stir them into the batter.

I ended up doubling the ingredients for the pound cake and added two cups of blueberries.

Bake The Pound Cake

The next thing you'll do is pour the batter into a greased tube or silicone bundt pan. Bake it for about an hour and 25 minutes or until a toothpick inserted near the center comes out clean.

Doubling the original pound cake recipe was the perfect amount for the bundt pan. And, the low carb lemon blueberry pound cake released from the ungreased pan with ease! I was very happy about that. I've had trouble with low carb cakes sticking to regular metal pans so I've invested in several silicone ones.

FAQs

What is wrong with my pound cake? ›

Pound cake is SUPPOSED to be a little dense. But it's not supposed to feel heavy or dry. If it's dry, the cake may have been over-baked. Pound cake can also be too dry if you added too much flour (or not enough butter or sugar).

What causes a pound cake to be gummy? ›

Those gluey pound cake streaks happen when your over-cream the butter and sugar. The cake rises in the oven and then it quickly collapses a bit while cooling which causes those gummy streaks. To prevent this, use a low speed with creaming and do so just until combined and fluffy, about 3 minutes.

What makes a pound cake gooey in the middle? ›

When a cake is wet in the middle it is because the edges have cooked faster than the centre. This happens because of the way the cake cooks naturally in the tin – the sides of the cake tin heat up first.

Why is my lemon pound cake dry? ›

The ratio of wet to dry ingredients determines a cake's moisture level. If there's simply too much flour and not enough butter, a cake will taste dry. On the other hand, if there's too much milk and not enough flour, a cake will taste too wet. Finding the right balance between wet and dry ingredients is key.

What happens when you overbeat a pound cake? ›

Mistake: Overbeating The Eggs

Add eggs, one at a time, beating just until the yolk disappears. Overbeating the eggs may cause the batter to overflow the sides of the pan during baking or create a fragile crust that crumbles and separates from the cake as it cools.

Should pound cake batter be thick? ›

Unlike layer cakes, which use a thin batter that should never fill the pan more than halfway (more on that here), pound cake batter is thick, and should fill the pan within an inch of the top to encourage a prominent crown.

Is it better to bake pound cake at 325 or 350? ›

Preheat oven to 325°F (163°C). Not 350°F. Generously grease a 10-12 cup Bundt pan with butter or nonstick spray. Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed until smooth and creamy, about 2 minutes.

Why is my gluten free cake gummy? ›

Gluten-free batters need a longer bake time.

Because gluten-free batters contain more liquid than traditional versions, they typically take longer to bake. If you remove them from the oven too soon, you may develop a gummy, mushy texture.

Can I use both butter and oil in cake? ›

A blend of these two ingredients gives the cake the best possible flavor and texture. Butter provides flavor while oil adds moisture and keeps it from being too dry. A cake made with all oil would be moist but lacking in flavor, and an all-butter cake may have a more buttery taste, but would be more dry.

What is the sad spot in pound cake? ›

There are several possible causes for what is called a sad streak in a pound cake. One is that there wasn't enough stirring in the early stages of preparing the batter. The other is that the cake needs to 'set' the crumb when you first remove it from the oven.

Why did my lemon pound cake sink in the middle? ›

If you have too much liquid or too much fat in your cake batter, this can result in a cake with a weak structure which can cause it to sink in the middle.

Why does the top of my pound cake crack? ›

First, why the crack occurs: Since quick breads and pound cake batters tend to be thick and dense, the exterior bakes first. But as the center of the cake continues to bake, releasing moisture, it rises, pushing through the top crust, and creating a crack.

Why does my pound cake fall when I take it out of the oven? ›

Too much air and your cake will collapse because it simply can't hold onto all that air. Overbeating can add too much additional air and/or large air bubbles which the cake can't support, causing it to collapse in the oven.

How do you make pound cake moist again? ›

The most common cake soak is simple syrup, equal parts sugar and water cooked until the sugar is dissolved. This added bit of liquid and sweetness help make the cake more moist, and stay moist longer. Professional bakers also use a milk soak, which is milk or cream dabbed onto the cake.

Why wont my pound cake come out of the pan? ›

Instead of applying gentle warmth to your cake pan, try a cold treatment. Turn the pan upside-down on a plate or cooling rack, and then set a bowl of ice cubes atop the inverted cake pan. After a few minutes of this quick-freeze technique, the whole cake should come out.

Why is my pound cake rubbery? ›

Wrong measurements - It is essential to follow the recipe instructions, especially the measurement part. If you mix incorrect measurements of sugar, butter, and eggs, the cake will become rubbery.

Why is my pound cake undercooked? ›

The main factor in managing the cooking time of your cake is the oven temperature. It's not unusual for an oven to run below temperature, often by at least 25 degrees, and some ovens run hot; if the sides of your cake brown before the center is set, you will need to lower the temperature.
